Nan's Wonderful Pecan Pie Muffins

~~~Shared on a breezy day on Nan's back porch in the country~~~

1 C. Chopped Pecans
1 C. Firmly packed brown sugar
1/2 C. Flour
2 Large Eggs
1/2 C. Melted Butter

Mix all together and put into tin foil muffin cup liners.

Bake @ 350 for 20 min.

Makes 12 small muffins. Double the batch, always....'cuz you won't have enough with one batch!!

Apple Sausage Oven Pancake
1 pack of brown and serve sausages...about 8 sausages (cook)
1 C. Bisquick
1/2 tsp.ground cinnamon
1/2 C. milk
1 egg
1/2 C. chopped apples (Use red and green for a festive look!)
Maple Syrup
1 C. Nuts, chopped

Grease pie plate. Set aside.
Mix together all ingredients except cooked sausages.
Pour into greased pie plate.
Arrange cooked sausages in a pinwheel fashion on top of batter. Add sliced apples, with skins on, in between the sausage pretty!!
Sprinkle with chopped walnuts or pecans, if desired.

Bake at 450 degrees for 20 min.

Slice in wedges and serve with warm maple syrup.

Serve with a fresh fruit and yogurt cup. Simple put fresh or frozen fruit in small dessert dish. Top with vanilla yogurt that you have whipped ahead of time. To whip, simple use a Wisk and whip by hand until yogurt is thinned out. Drizzle a goodly amount on top of fruits. Top with slivered almonds and a sprinkle of Nutmeg.

Clancy's Cheese Baked Eggs
2 cups extra sharp cheddar cheese 4 large eggs
6 TBSP. light cream
1 tsp dry mustard
1/2 tsp. salt
2 TBSP. melted butter

Grease pie plate.
Add cheese in pie plate and make 4 little wells to hold each of the 4 eggs. Combine next ingredients and pour over eggs.
Dot lightly with butter.

Bake for 18 min. at 350 degrees.. just until eggs are still jiggly!

Serve each egg with mixture on a buttered English Muffin.

Serve with turkey bacon and a wedge of melon and strawberries.

Baked Peach Pancake
8 eggs
1 1/2 C. milk
1 C. flour
3 TBSP. sugar
1 tsp. vanilla
1/2 tsp salt
1/2 tsp. cinnamon
1/2 C. butter
4 sliced and peeled peaches
4 TBSP. brown sugar

Mix eggs, milk, flour, sugar, vanilla, salt and cinnamon.
Melt butter in 9X13 pan while warming oven. (Set oven at 425 degrees) Add sliced peaches to pan and put in oven until sizzles.
Remove pan from oven and pour batter over peaches.
Sprinkle with brown sugar.

Bake for 20 min.

Serve with sausage links, fruit and vanilla yogurt and a pitcher of hot, apple cider.

Stuffed French Toast
Using one large loaf of Italian Bread, slice into 3 inch pieces.

Cut a deep slit into the top of each piece, almost all the way to the bottom but not cutting the bottom.

Fill each pocket with one tablespoon of cream cheese.
Set these aside.

In bowl, mix together:

3 Cups of milk
2 Eggs
1 TBSP. Of Vanilla Extract
Few Dashes of Nutmeg or Cinnamon

Heat griddle to almost the highest temp. Spray with Pam.

Dip each piece of French toast into the egg mixture and grill on both sides until toasty brown.

(optional: Dip in coconut after dipping in the egg mixture.)

Topping to Drizzle over French Toast: Make this FIRST
In sauce pan, bring to boil then IMMEDIATLEY turn to low until ready to garnish French Toast

Orange Sauce:
1 stick of butter
1 can of Orange Juice Concentrate
I cup of Sugar

(you can also use apple juice concentrate for another option)
This sauce stays for up to 3 weeks in the fridge. Just heat and stir to use again.

Final Garnish: After putting French toast on plate, drizzle orange sauce over the top and around the sides of the plate.

Serve with sausage links or bacon.

English Breakfast Pie
1 pound of sausage, cooked and drained (I use hot sausage!)
6 eggs, beaten
2 cups shredded extra sharp cheddar cheese
1 can packaged cresent rolls (8)

In bowl combine cooked and crumbled sausage, eggs, and cheese. Spray a pie plate(regular size) with cooking spray. Line the bottom of the pie plate with just 4 cresent rolls. Pat in bottom of pan. Cover with the egg mixture and top with remaining 4 crescent rolls. (Just lay them over the top.) Sprinkle with parsley and chives. Bake at 350 degrees for 30 minutes. Serve on a pretty cake plate with a bouquet of fresh sage sticking out of the middle of the pie.

Serve with lots of fresh fruit, iced cranberry juice, and coffee.

Cindy's Baked Oatmeal
1/2 C. oil
2/3 C. sugar
2 eggs
1 tsp. vanilla.....beat these ingredients together with wooden spoon.

Add the following: 2 tsp. Baking Powder
1 C. milk
3 C. oatmeal
Handful of raisins, if desired

Mix well with the oil, sugar, eggs, and vanilla and pour into a greased, 9X13 glass pan. Bake at 350 degrees for 30 min. Serve in pretty dish with fresh fruit on top and a little brown sugar. Top with whipped cream and nuts, if desired. Will be a heart-warmer every time!!!

I double this and it can be re-heated.
